Ingredients

  • For The Dressing
  • Juice of 1 lemon

  • 3 cloves garlic, minced

  • 2 tsp. soy sauce

  • 1 1/2 tbsp. Dijon mustard

  • 1 1/2 tbsp. nutritional yeast

  • 1 tbsp. hummus

  • 1 tbsp. extra-virgin olive oil

  • 1/4 tsp. cayenne pepper

  • 1/4 c. water

  • For The Salad
  • 1 bunch kale, stems removed and roughly torn

  • 1 c. cooked quinoa

  • 1 avocado, sliced

  • 1 head romaine, cut into bite-sized strips

Directions

  • Make The Dressing**
  • Whisk in the water, lemon juice, soy sauce, olive oil and cayenne. Whisk until thoroughly combined. Set aside.
  • In a small bowl, mix mustard, nutritional yeast, hummus and garlic. Mix until form a paste.
  • Make The Salad
  • In a large bowl, add kale, romaine and quinoa. Toss with dressing. Place into bowls. Serve with sliced avocado.
