Spiced Coffee Cookies with Caramel Vanilla Glaze is one of my most favorite cookies. I found it in my friend’s party. Once I bit the first time, I were addicted by their charm. They are moist, tender and delicious. That is the best of the best delicious cookies I never try before. Of course, I brought the good cookie for myself. When having the recipe on hand, I often make and treat family. Luckily, both my kids and my husband love eating them so much. Evenly, they can eat them everyday. At my small parties, or gatherings on weekends, I also make them for desserts.

There is nothing better than when you enjoy them with a cup of hot drink like tea or coffee. That is great thing. I often make a large of amount, and keep them in an airtight container or ziploc bag and put them in the fridge. They are available and ready to serve at any time. So, my stomach never get hungry.

When tried them at the first time, I was quite clumsy, but I had detailed instructions of the recipe, I easily had great my own cookies. At that time, I feared I would fail. Unexpectedly, I was successful. Their taste were better than I imagined.

Spiced Coffee Cookies with Caramel Vanilla Glaze is one of my most favorite cookies. They are moist, tender and delicious

Ingredients

  • Cookies
  • Mix together
  • 2 cups brown sugar, packed

  • 2 eggs room temperature

  • 1 cup unsalted butter, softened

  • Stir In
  • 1 tsp vanilla extract

  • 1/2 cup cold coffee strong

  • Sift together
  • 1 tsp salt

  • 1 tsp cinnamon

  • 1 tsp nutmeg

  • 1 tsp baking soda

  • 3 1/2 cups flour

  • Caramel
  • 14 ounce sweetened condensed milk

  • 2 tbs unsalted butter

  • 2 tsp unsalted butter

  • 1 cup powdered sugar

  • 1 tsp milk

  • 1 tsp cold coffee

  • 1 cup brown sugar packed

  • 1/2 tsp vanilla

  • 1/2 tsp vanilla extract

  • Vanilla Drizzle

Directions

  • Cookies
  • In the bowl of an electric stand mixer, stir coffee mixture and butter mixture. Mix together until combined. Gradually add sifted ingredients, mixing until combined in one.
  • Chill dough in 30 minutes (for at least).
  • Heat oven to 375 degrees F. Grease or line 4 baking sheets with parchment paper.
  • Use a 1-1/2 tablespoon scoop, place cookies onto baking sheets.
  • Bake until the edges are slightly brown, maybe for 8 minutes or more . Remove the cookies from the pan, and then put them on a cooling rack. Let aside to cool completely.
  • Caramel
  • Combine condensed milk and brown sugar in a medium saucepan. Bring to a boil and whisking constantly. Reduce heat, and simmer for 5 minutes, whisking constantly.
  • Remove from heat and whisk in butter and vanilla.
  • Spoon hot caramel over cooled cookies. When cooled, the caramel will set and be difficult to spoon so wait to make the caramel when the cookies have cooled.
  • Vanilla Glaze
  • Melt butter in the microwave in a glass bowl. Add remaining ingredients and mix well until blended. Turn on high and blend for another minute or until smooth. Drizzle with a fork, piping bag or a squeeze bottle. Allow drizzle to set. Ready serve!
