Ingredients

  • 1 lb. boneless skinless chicken breasts

  • 1 c. low-sodium chicken broth

  • 1/2 tsp. garlic powder

  • 1/2 tsp. Italian seasoning

  • 4 tbsp. butter, softened

  • 2 c. heavy cream

  • 1/2 lb. rigatoni

  • 1/3 c. freshly grated Parmesan

  • Kosher salt

  • Freshly ground black pepper

  • Freshly chopped parsley, for garnish

Directions

  • Add chicken, heavy cream, butter, and broth in a slow cooker. Season with garlic powder, Italian seasoning, salt, and pepper.
  • Cook on high for 2 hours, until chicken is cooked through. Transfer to a plate and shred with two forks. Set aside.
  • Add rigatoni and Parmesan to slow cooker, and cook until rigatoni is tender, for another 20 – 25 minutes.
  • Return chicken to slow cooker and toss to combine. Garnish with parsley before serving.
