Shrimp Quesadillas with Bell Peppers

Ingredients

  • 1 lb Shrimp, small, cleaned, deveined

  • 9 or 10 inch flour tortillas

  • 2 sprigs, cilantro, chopped

  • 2 tbsp olive oil

  • 2 to 3 cup cheese mix

  • 2 large tomato, chopped, seeds removed

  • 1 medium red bell pepper, chopped, ribs and seeds removed

  • 1 large red sweet onion, chopped

  • As per need salt

  • A pinch of sugar

  • 1 tsp oregano, dried

  • 1 tsp garlic, powder

  • 1 tsp onion, powder

  • 1/2 tsp black pepper, powder

  • 1/2 tsp parsley flakes, dried

  • 1 tsp cayenne red pepper powder/ smoked paprika

  • 1 tsp lime juice

  • 1/2 tsp crushed chipotle peppers in adobo sauce

Directions

  • In a bowl, mix together shrimp, onion, tomato, bell pepper, spices, chipotle chili, salt and toss well.
  • In a pan, add olive oil and spread the shrimp mix evenly.
  • Add the cilantro, lime juice and mix well.
  • Cook till shrimp is pink and veggies are soft and cooked well.
  • On a grilling plate/ skillet/ large pan, place the tortilla, spread little cheese mix then the layer of generous amount of shrimp mix, then another generous layer of cheese mix.
  • Cover with another tortilla wrap and let them grill/ cook till cheese melts and the tortillas get crispier.
  • Cut the quesadilla into 4 equal halves. Make cut horizontal and then vertical from the center.
  • Serve immediately with a dip of your choice.
