Roasted Pork Loin

  • 4 large garlic cloves, pressed

  • 4 tsp chopped fresh rosemary or 2 teaspoons dried

  • 1 tsp olive oil

  • 2 1/2 to 3 pound boneless pork loin roast, well trimmed

  • 1 1/2 tsp coarse salt

  • 1/2 tsp ground black pepper


  • Preheat oven to 400°F.
  • Line a 13×9 pan with aluminum foil.
  • Mix the first 5 ingredients in a bowl to a make a paste.
  • Rinse the pork loin and dry it off with a couple paper towels.
  • Rub garlic paste all over pork.
  • Place pork, fat side down, in prepared roasting pan. Roast pork 30 minutes.
