Mason Jar Omelets are a perfect recipe to upgrade boring egg meals to new level. When making, they do not require much effort and are made with only a short of time.

Ingredients

  • 1/2 c. ham, diced

  • 4 large eggs

  • 1/2 onion, finely chopped

  • 1 red bell pepper, chopped

  • 2/3 c. shredded Cheddar

  • 1 tbsp. freshly chopped chives

  • nonstick cooking spray

  • kosher salt

  • Freshly ground black pepper

Directions

  • Grease two 16-ounce mason jars with nonstick cooking spray.
  • Each jar, crack two eggs into. Divide cheese, onion, ham, and bell pepper into the two jars, and season with salt and pepper.
  • Place lids on jars,shake until eggs are scrambled and ingredients are combined.
  • Remove lids and place in the microwave. Microwave on low for 4 minutes, after each 30 seconds, let check.
  • Chives for garnish. Ready for serving.
