Ingredients
1/2 c. ham, diced
4 large eggs
1/2 onion, finely chopped
1 red bell pepper, chopped
2/3 c. shredded Cheddar
1 tbsp. freshly chopped chives
nonstick cooking spray
kosher salt
Freshly ground black pepper
Directions
- Grease two 16-ounce mason jars with nonstick cooking spray.
- Each jar, crack two eggs into. Divide cheese, onion, ham, and bell pepper into the two jars, and season with salt and pepper.
- Place lids on jars,shake until eggs are scrambled and ingredients are combined.
- Remove lids and place in the microwave. Microwave on low for 4 minutes, after each 30 seconds, let check.
- Chives for garnish. Ready for serving.
